Asian Beef Bowls

Ingredients
- 1 1/2 Tbsp hoisin sauce
- 3 Tbsp oyster sauce
- 1 1/2 Tbsp Chinese cooking wine (or mirin/dry sherry)
- 3 1/2 Tbsp dark soy sauce
- 1 Tbsp brown sugar — staple
- 3/4 tsp sesame oil
- 1/2 tsp white pepper — staple
- 1 1/2 Tbsp oil — staple
- 3 garlic cloves, minced
- 1 large onion, finely chopped
- 800g lean beef mince
- 1/2 cup spring onions, sliced, plus extra to garnish
- Sesame seeds, to garnish
- Cooked rice, to serve — staple
- 2 heads bok choy, halved lengthways
- 1 head broccoli, cut into florets
- 2 garlic cloves, sliced
Method
- Mix the hoisin, oyster sauce, cooking wine, dark soy, sugar, sesame oil and white pepper in a bowl.
- Heat the oil in a large skillet or wok over high heat. Add the garlic and onion and cook 1 minute until the onion starts browning.
- Add the mince and cook, breaking it up as you go.
- Once the beef has changed from red to brown, pour in the sauce. Cook 3-4 minutes until the sauce has reduced onto the beef and it's cooked through. Add a splash of water and keep cooking if you want it browned further.
- Asian greens: in a second pan (or the wiped-out wok) heat a splash of oil, add the sliced garlic, then the broccoli florets and bok choy with 2 Tbsp water. Toss with a lid on 3-4 minutes until bright green and just tender.
- Stir the spring onions through the beef, then serve over rice with the greens alongside, garnished with extra spring onion and sesame seeds.
Notes
- Protein-first portioning: meat set to 800g per 4 serves to land ~44g protein/serve (house rule).
- Mince is up 60% on the source, so the sauce, oil, garlic and onion are scaled ~1.5x to match — at source quantities the sauce would not coat this much beef.
- Lean mince is best here — drain excess fat before adding the sauce if using standard mince.
- Hoisin and oyster sauce are interchangeable at a pinch: swap 1 Tbsp oyster for 3/4 Tbsp hoisin, or the reverse.
- Steamed broccoli, bok choy or a handful of frozen peas stirred through at the end rounds it out.
- Veg sweep: dish was light on veg, so the house Asian greens side (bok choy + broccoli, garlic pan-tossed) is now a required component (~180g veg/serve); calories +50 and protein +2 to match. Dark soy, garlic and onion lost their staple markers and gained search hints.
